Chef Pradeep Khullar Launches Bootstrapped Chole Bhature Venture in Dubai
Michelin-recognized chef pivots to street food, managing high demand with limited weekend operations.
1From Michelin Stars to Street Food
Chef Pradeep Khullar, previously recognized by the Michelin Guide for his consulting work at Nazaara, transitioned from fine dining to launching Bhaturewala. Alongside partner Saubhagi Veer, he opened the venture on October 16, 2026, in Dubai’s Oud Metha neighborhood. The business focuses on serving authentic North Indian chole bhature to local customers.
2Bootstrapping a Culinary Vision
The founders entirely self-funded their venture using personal savings, eschewing external capital. They secured a small shop space previously occupied by failed businesses, despite warnings regarding the location's potential. By maintaining a lean operational model, they keep the dish price at AED 20, approximately ₹517, ensuring accessibility for their target market.
3Operational Constraints and High Demand
Bhaturewala operates on a restricted schedule, serving customers only on Fridays and weekends. Friday hours are limited to 6pm–8pm, while Saturday and Sunday sessions are split between morning and evening shifts. This scarcity, combined with high demand, frequently leads to long queues and instances where food runs out before all orders are fulfilled.
4Managing Customer Expectations and Feedback
The intense demand has led to occasional customer frustration regarding wait times and parking. While some critics allege that the duo limits production to artificially inflate demand, partner Saubhagi Veer denies this, emphasizing their desire for revenue. They actively monitor feedback, which has already prompted adjustments to their service procedures and operating hours.
5The Human Cost of Entrepreneurship
The founders face significant physical and mental strain, often sleeping only two hours during the weekend. Khullar begins preparations at 4am, while Veer manages logistics, labeling, and accompaniments. They describe the pre-service period as an anxiety-inducing experience, comparing the intensity of their daily operations to preparing for a high-stakes academic examination.
6Resilience Through Personal Hardship
Khullar’s career path was shaped by early financial struggles following his father’s death in 1998. His mother’s dedication to running a boutique in Delhi taught him the value of hard work and customer management. These formative years provided the resilience necessary to navigate the financial pressures of moving to Dubai in 2015.
7Strategic Pivot in Dubai Market
Moving to Dubai in 2015, Khullar initially aimed to pay off home loans within two years. His career progressed through roles at Jodhpur and Mint Leaf of London before he ventured into independent consulting. The shift to Bhaturewala represents a strategic pivot, leveraging his fine-dining expertise to elevate a simple, nostalgic street food.
8Commitment to Quality Over Scale
Despite the pressure to increase output, Khullar remains committed to maintaining product quality. A notable interaction with a customer who hugged him instead of complaining about a delay reinforced his focus on authenticity. This commitment to the craft remains the core driver of their business, even as they navigate operational growth challenges.
