Gwyneth Paltrow Unveils Goop Kitchen's First Physical Restaurant
Wellness brand Goop debuts its first dine-in location in San Diego with meticulous design details.
1From Ghost Kitchen to Brick-and-Mortar
Gwyneth Paltrow's wellness brand Goop has operated as a delivery-only ghost kitchen since 2021. The new restaurant opening August 31 on the San Diego coast marks the brand's first physical dining space, with a second Manhattan location planned later this year. Unlike its delivery-focused past, the restaurant will feature new menu items designed for in-person dining experiences.
2Architectural Obsession
The restaurant's most labor-intensive element is the reeded, translucent kitchen window that obscures cooks while showing their silhouettes. Architecture firm Michael Hsu Office rebuilt this design feature multiple times. Lead architect Maija Kreishman hopes all guests will notice this detail that aligns with Goop's design philosophy. The fluted glass from Pulp Studio creates movement without full visibility.
3Materials That Age With Character
The space features one-inch Thassos mosaic marble flooring with Nero Marquina borders. The kitchen window uses fluted glass while lighting fixtures are made of real pewter that tarnishes over time. Behind the POS area stands a dramatic slab of veined Breccia Capraia marble carved with the Goop Kitchen logo. Paltrow wanted spaces to 'feel the time that's passed.'
4Avoiding Wellness Clichés
Architects avoided typical wellness restaurant tropes like clinical white boxes or overdone rustic decor. They refused to name a particular style or make the project thematic. Instead, they let Goop Kitchen develop its own voice without 'screaming.' Paltrow emphasized this isn't a 'wellness space' but rather one evoking tradition, togetherness and timelessness.
5Haussmannian Paris as Muse
Paltrow drew inspiration from Haussmann-era Paris and what she calls 'Parisian New York' - the New York of her youth. The design integrates 'timeless' elements reminiscent of all-day brasseries. Architectural continuity will connect the San Diego and Manhattan locations. The Del Mar space serves as the first proof of concept for this vision.
6Outdoor-Optimized Design
Located in a walkable, mixed-use open-air development, the restaurant maximizes its coastal setting. The patio was designed to feel like a garden terrace rather than a development courtyard. Outdoor seating uses durable Perennials performance fabric. Sun-washed interiors take full advantage of the indoor-outdoor environment.
7Material Fastidiousness
Walls feature fine-grain lime plaster from Domingue Finishes with moldings painted in glossy Benjamin Moore Classic Gray. Dining room upholstery uses custom Schumacher fabric with dark green stripes whose width and tone were specified by Paltrow. All tables and booths are crafted from solid walnut. Paltrow personally tested textures under actual lighting conditions.
8Reimagining Customer Experience
The design innovates in areas fast-casual restaurants typically treat as logistics - the counter, pickup and waiting areas. The order counter was designed as furniture with an aged look and clouded stone top rather than a kiosk. Meals are handed directly to guests rather than placed on shelves. Two separate entrances - one for delivery drivers, one for dine-in guests - receive equal design consideration.
